WEEKLY MEAL PLAN . . . It's that time again
Here we are again. Monday. Time to get the week going and think about feeding the family. I had a few positive comments after last week's Post on my Weekly Meal Plan, so I thought I'd try to keep the streak going and share what's cookin' over here this week:Of course, it's Monday, so here's my Crockpot Monday meal to begin the week-1. SLOW COOKER BRAISED PORK SHOULDER.This is a great recipe from Danielle Walker's Against All Grain. She shares some great gluten-free, dairy-free, paleo recipes that are really quick and simple. I'm a huge fan of this book. You may remember I posted about it earlier HERE. As of now this recipe is not available on Danielle's blog or on the internet. As this is solely HER recipe and her property I cannot really share here. If you are interested in the ingredients, you can find those HERE and just think about braising the pork, sautéing the garlic, pancetta and onions and throw all in the crock pot. Put in the carrots during the last two hours and you'll have your meal ready!2. BARBECUE SALMONI have some wild salmon in the freezer from a recent grocery special, so I want to use it before I forget about it! I am basically going to prepare a barbecue rub, drizzle a little olive oil on the salmon, coat the salmon with the rub and cook it in the oven. Soooo simple. If you don't have a good rub recipe, let me know and I'll give you mine, or just google and I'm sure you can find a great one!3. GRASS FED BURGERSI'll prepare these indoors on one of my inherited cast iron skillets. We love to cook our burgers this way when it's too hot to grill or we need to cook without much of a production.SIDES THIS WEEKI picked up asparagus to grill, broccoli rabe that I will sautee in olive oil and garlic, and light caesar salad fixings (as my boys always eat this!)There you have it.
