Mediterranean Layered Dip. . .Perfect for the Weekend
My mom had a few things she loved to take to parties or get togethers. She was not a gourmet cook, but did spend a lot of time in the kitchen. She had some signature dishes. Her Dixie Relish definitely needs to be marketed and her homemade pimiento cheese was one of the best out there! In the last couple of years she was a huge fan of having or taking a Greek Layered Dip to one of her social events or get togethers. I don't think I have ever had her recipe, but while I was thinking of something to prepare this afternoon, I thought of her and decided to give it a try. It's full of fresh and healthy ingredients, most of which you likely have right on hand, is not complicated, because I rarely do complicated, and is light and perfect for this time of year. So, today, in honor of my mom, here is my Mediterranean Layered Dip.Mediterranean Layered Dip6 oz crumbled Feta Cheese2 oz 1/3 less fat Cream Cheese, soft2 T nonfat Plain Greek Yogart8 oz Garlic Hummus1 1/2 Tsp Olive Oil2 Tsp White Wine Vinegar1/4 Tsp Garlic Powder1/4 Tsp Dried Basil1/4 Tsp Dried Oregano1/4 Tsp Dry Mustard1/4 Tsp Pepper1/2 Cup Diced Green Onions1/2 Cup Diced Cucumber1/2 Cup Diced Tomatoes1/2 Cup diced Black OlivesIn a medium mixing bowl, combine the Feta, Cream Cheese and Greek Yogart until smooth.
