Watermelon Gazpacho
Watermelon Gazpacho . . . Lazy Girl Recipe perfect for Summer
Recently I have found myself craving watermelon, pineapple and have actually been eating an apple a day.
One day this week, since I had oh so much watermelon in the fridge, and the thought of cooking a meal just felt. well, not fun, I decided to go back to something delicious and refreshing that would include watermelon and help that craving.
If you follow me on Instagram you may have seen it in my stories, If not, even better. This is really good. You know I don’t share until I’ve tested to make sure. And this is so easy it falls right in my Lazy Girl category.
Also, during one of my recent (many) moves, my food processer disappeared. Therefore, I use my Ninja blender for EVERYTHING - including this Watermelon Gazpacho.
Watermelon Gazpacho
Ingredients;
4 Big Cups of watermelon (seedless is preferable, but I used what I had from the grocery)
3 Medium ripe tomatoes
1 English cucumber, diced
1 Red Bell Pepper, chopped
1/3 Cup green onions, chopped
1 heaping T of minced garlic
Handful of fresh basil
1/2 Jalapeno pepper, chopped and seeds removed (do not touch your eyes or face!)
3 T good olive oil
4 T Balsamic vinegar (one can also use red wine vinegar if that is what you have on hand)
Fresh pepper. (I do not cook with salt, but here is where you would add your salt)
First of all, gather all of your ingredients. Chop everything that needs chopping.
Add the watermelon, garlic, basil. and tomatoes to the blender (if they all will fit)
Blend until smooth. Remove to a large bowl.
Add the remaining cucumber, bell pepper, onions, jalapeño, and pepper to the blender. Blend for just a second.
Add the olive oil and balsamic vinegar to the blender and blend all together until smooth.
Pour into the large bowl with the watermelon and tomatoes and stir together.
If you like something to “chew” then add what you have remaining on your chopping block to the top.
Cover and enjoy!

I’ve been very absent from this space lately, and have wondered whether I should just shut it down. I don’t know if folks even read blogs anymore (I actually have a few I still love to check in with and subscribe to). But I’ve not been regular here, have not felt creative, and there is SO much out there that I know it can be exhausting to reader.
However, I’ve actually missed this. The writing, editing, putting what is in my life or experiences to paper. So, for the summer I am taking this back as one of my “summer projects” to see how it goes. Can I stick with it? Can it be relatable? Interesting? Worth your time?
I guess we will see. . .
