BLACK BEAN CHICKEN & SPINACH SOUP . . .

IMG_0995I know I really have no reason to complain.  I really don't.  There are folks out there who actually have real reasons to complain.  I am not one of them.  That being said, I know I am going to sound like a whiner, and I guess I really am a whiner at heart because I am here to say I don't like the cold.  I don't like the thought of cold, being cold, or anything about the coldness that comes with cold.  And it's winter here so cold comes with the territory.   And as I type this I also know that where I am is not really cold.  There are no icicles on my roof.  No bone chilling wind blowing.  No snow on the ground.  No chains on my car tires.  In fact, my car is parked in a nice, covered garage, not impacted on a snowy bank undriveable for days . . . So, just so you know that I know that I am a whiner about cold weather.The only thing I DO like is the warm, comforting, filling soups I can come up with for supper.  Oftentimes I come up with recipes using just what we have on hand because I am too cold (or lazy) to get out and go grocery shopping. . . .The other night was just such a night and what I call Black Bean Chicken & Spinach Soup was born.  And it was so tasty it will definitely be re-born!BLACK BEAN  & CHICKEN SPINACH SOUPINGREDIENTS:1 medium onion, chopped2-4 cloves garlic, chopped2 T Olive Oil1 1/2 tsp coriander1 tsp cumin1 can diced green chiles1 can diced tomatoes with green chiles (like Rotel)1 can black beans, rinsed and drained2-3 handfuls of fresh spinach1 quart low sodium chicken broth3 chicken breasts, cooked and shreddedIn a medium pot heat heat the olive oil over medium heat, add onions and garlic, diced green chiles, spices and season with salt and pepper. Cook, stirring until soft. Add the beans, tomatoes, chicken broth, 2 cups of water and spinach. Add in chicken. Bring to a boil then reduce heat to medium and cook until spinach wilts.Serve with any toppings of your choice - or none - it's so good all by itself!That's it!Enjoy on your next cooooold night!Are you a cold weather fan?
