Kick Start Kale Salad and my Challenge Update

Ever feel like you need to kickstart your week on Monday morning?  Maybe hit a refresh button to get you back on the healthy track?  Maybe it was a fun filled weekend full of lots of football and celebrations, like if you are in the South and you were either celebrating (or mourning) the Ole Miss victory over Alabama.  Maybe you were at a Homecoming Football Game or, like me, a Parents Weekend at a child's college.  

Maybe you just let things slide on the weekends, getting off your normal routine and feel like you need a kick to get it back.  If so, I've got you covered!  I made this delicious Kale Salad last night and it's the perfect thing for a Monday lunch - full of all sorts of fresh, healthy, yummy additions.  Feel free to throw in a protein of your choice . . .chicken, shrimp, beans, edamame, or what you have on hand.  I made sure to include some "crunchy" things, too!  Here it goes:

KICKSTART KALE SALAD

1 Bunch, washed and trimmed Kale
1 Cucumber, chopped
1 yellow Bell Pepper, chopped
1 Red Bell Pepper, chopped 
1 Cup shredded Carrots
1 Tomato, chopped
5 Radishes, sliced
1 small can Water Chestnuts, chopped
1/2 Avocado, chopped
Handful of chopped walnuts (optional)
Handful of feta cheese (optional)

Dressing:
2 Lemons Juiced
2 Tsp Olive Oil
3-4 Garlic cloves, minced
salt and pepper
1 tsp Dijon Mustard
Whisk together all ingredients and use lightly over salad.  This will hold in sealed container quite a few days!

That's my recipe to Kickstart your Week!  I just had my salad and am feeling great!!

Now, for my Savings Spree Challenge.  You may remember I wrote about my newest self-imposed challenge here.   Well, I'm here to confess that it's been getting pretty difficult lately!  So much that I have to confess to buying TWO things lately.  Arrghhh, I am a failure.  I bought a pair of shoes because I was convinced that I didn't have any to wear to an event.  As it turned out, I did not even wear the new ones that I thought I just had to have.  Complete failure.  Secondly, this weekend I was out in the late afternoon and I was cold.  What did I do?  I bought a sweater.  Isn't that what a normal gal would do?  I think,  yes, that's it.  AND it was really cute and I am sure I will get TONS of wear out of it.  However, that doesn't negate the fact that I did not HAVE to have the sweater.  I think I really just got the bug and wanted to see what was in the cute shops around.  That's the downfall.  Looking is the downfall.  

So, I have made my confession, and I'm back on the wagon.  Not only have I Kickstarted my diet this week - now I have Re-Kickstarted my No Shopping Challenge.  

I'll let you know if I have any more slip - ups!  (Just so you know my tennis coach was appalled at my tennis racket and told me I absolutely needed a new one . . . .what's a gal to do?  I'm still holding tough though . . . .)  Words of encouragement would be really useful!
