The Best Black Bean Vegetarian Chili
Whether you are cooking for two in your empty nest or for a crowd this chili recipe is always a hit. It’s so simple, and full of tasty vegetables. It is a great one pot meal that you can whip up and let it sit on the stove, have for the game, while you decorate or wait for your people to arrive.
I made this last week and ate on it all week long. Today in Atlanta is definitely chili weather so perfect timing to share! I’ll also be making my No Bake Chocolate Oat Bars later today for a fun Cookie Exchange this week (:
Black Bean Vegetarian chili
Ingredients:
1 onion, chopped
2 zucchinis, halved and sliced
1 red bell pepper, chopped
1 T chopped garlic (orto your taste)
1 T olive oil
2 cans black beans
1 can Great Northern beans
2 cans Fire Roasted Tomatoes
1 can green chilis
1/2 packet Siete Taco seasoning
1 T cumin
1/2 T chipotle chili powder
Directions:
In a dutch over, heat the olive oil and add the garlic. Cook until fragrant. Add the onion, bell pepper and zuchinni. Cook about 5 minutes until softened. Add beans, tomatoes, chilies and seasonsings and cook stirring. Let simmer on low until ready to eat.
Serve with plain greek yogurt, sour cream, shredded cheese, avocado, green onions or whatever you fancy.
Freezes well if you happen to have any leftover. (:
