Two Posts in One

I am often a lazy cook, especially on the weekends.  I admit that.  If pizza were a good for you, healthy option it would be our Sunday night staple.  I think we can agree that pizza is an amazing food.  It just tastes so darn good!  It is not always the very best, though, when it comes to making the healthiest choices to feel our best. That bloated feeling from the crust is just not fun on a Monday morning!   For me, Sundays are typically an active recovery day and a low carb/macro day following the Better & Beyond lifestyle.  That means making a better choice, but that is just as tasty while being wholesome.If you saw my Insta Story Sunday you know what I'm talking about.Enter a new Cauliflower Crust Pizza recipe.  I have made pizza with a cauliflower crust in the past and it was so-so and took more time  than this lazy cook wanted to invest.  Since those pre-made bags of cauliflower crumbles are now everywhere, this dinner couldn't be easier!EASY CAULIFLOWER CRUST PIZZAIngredients1 bag (16 oz) Fresh Cauliflower Crumbles1 egg white1 cup shredded part-skim mozzarella cheese2 T grated Parmesan cheese1 tsp garlic powder1/4 tsp dried basil1/4 tsp dried oreganoPinch of pepper1/4 cup almond or coconut flourInstructions:Heat oven to 425.  Tear Cauliflower bag at top.  Place in microwave and cook on high 4 minutes.  (Or cook however you like if you are not a microwave fan)Cover a large pizza pan with paper towel.  Spread cooked cauliflower onto sheet to cool for 10 minutes.Place in a large bowl.  Add remaining ingredients stirring well.  My crumbles were a bit on the large size so I used a potato masher to work through the dough.  Mix into a loose dough ball.Place mixture onto parchment paper; pat and press into a 10" circle or desired crust size.Bake 15-17 minutes until lightly browned.  Remove and cool.Carefully flip cooled crust onto a cookie sheet and remove parchment paper.  Add your favorite toppings.Bake 6-10 minutes at 425 until toppings melted.Slice and enjoy!Remember I am NOT a food blogger!  My photos are created in real time in my kitchen just as I am preparing these foods for my family.  This is not what I do . . .
