TURKEY STUFFED PEPPERS
One of the first questions I get during the late afternoon pick-up is "What's for dinner?". It's always a good day when I have a ready answer. Yesterday I got that question and responded, "stuffed peppers". Since this questioner has always been interested in his meals AND making sure that they are tasty, I had to answer the "What's that?" question and give him a detailed explanation.I was so pleasantly surprised that he thought the idea of stuffed peppers was pretty cool and gave his approval during the prep. Always happy to share a dinner win with ya'll, here it is.TURKEY STUFFED PEPPERS4 large multicolored bell peppers, tops sliced off and peppers hollowed and cleaned. Reserve top of one pepper and chop.1 lb lean ground turkey3/4 cup broccoli rice (I used this rather than brown rice)1/3 cup Italian breadcrumbs3/4 cup marinara sauce1/4 cup parmesan cheese1/4 cup chunky salsapepper1 egg, beaten3 garlic cloves, minced1/2 cup waterHandful of shredded mozzarella cheeseDirections:Preheat oven to 350, prepare the peppers. Combine chopped pepper top with ground turkey, cooked broccoli rice, breadcrumbs, 1/4 cup marinara, parmesan cheese, salsa, pepper, egg and garlic. Mix well.Place peppers into a dutch oven. Fill about 1 cup ground turkey mix into each pepper. Pour 1/2 cup water into bottom of dutch oven. (If it's a large dutch oven you may need to add more water). Cover the dutch oven and bake until cooked through, about 45 - 50 minutes. Remove from oven and sprinkle mozzerella cheese on top of each pepper. Place under the broiler for just a few minutes until browned to your liking.These are so colorful and beautiful!
