Ebook Launch! and the Easiest Dinner EVER
Well, today is the day! I am super excited about this. I know it might not seem like a lot, but it's one of those Firsts of stepping out of my comfort zone and trying something new. Not exactly as big as jumping out of an airplane (which has always been on my bucket list!) but putting something together and putting it out there is a step.One of the biggest requests I get from readers is about recipes. Ideas for healthy lunches, dinners, my favorite meals to serve, what my people will eat and almost always these requests also want ideas that are quick and easy. Keeping these questions and requests in mind I thought I would corral my favorite soups and salads together in one place for easy planning. Today, I am launching my Ebook of my 12 Soups & Salads to Feel Your Best. While it may seem like soup weather is over, think again! We are actually having a soup for dinner tonight! And there are some lighter variations, including a yummy gazpacho recipe, in this compilation that are perfect in warmer months. Since the weather is starting to get warmer and Spring is here for some of us, it's the perfect time to think about all the good salads there are to add to meals or have as meals themselves.

The other night we had one of the best but hands down easiest dinners EVER!We had some chicken thighs (but chicken breasts would also work wonderfully) and fresh asparagus. Who knew those two simple ingredients could be such a crowd pleaser?Here's how simple a good dinner can be!Roasted Chicken and Asparagus
- 4-6 small skinless chicken thighs or boneless skinless chicken breasts
- 2 T Olive Oil
- 4 Garlic Cloves, minced
- 1/2 Fresh Lemon
- Salt and Pepper to Taste
- Sprinkle of thyme and garlic powder
- Rinse chicken, pat dry and season with salt and pepper.
- Preheat oven to 400 degrees. Heat olive oil and garlic in medium, oven proof sauté pan or skillet on medium until warm. Add chicken and brown on both sides, approximately 8-10 minutes. Remove from pan onto a plate.
- To the pan add asparagus and sprinkle of thyme and garlic powder. Add the chicken back to the pan and place in the oven to roast until cooked through, approximately 20 minutes.
