Raw Veggie Salad. . . my version of a detox meal

I wanted something light to prepare and have in the fridge for the week.  After looking through 3-4 cookbooks without being inspired, I decided to turn to Pinterest.  Now, I'm not the greatest "pinner" out there, but when I have some time I love going through Pinterst  boards.  It can be such a huge inspiration AND a huge time sucker, know what I mean?Anyway, I have a great Raw Veggie Salad to share.  If you read my latest post on Detox, this salad would be the perfect thing to eat on my version of a detox.  It's light, crunchy, tasty and super healthy.  If you are having it for lunch, throw on some protein like grilled chicken, shrimp, salmon or your choice.  Today, for lunch, I added some crunchy, roasted Pepitas.  Really tasty.IMG_0170 copy RAW VEGGIE SALADWhat You Need:1 small purple cabbage, shredded1 hearts of romaine section, shredded2 cups shredded carrots1 acocado, peeled and choppedLight Salad Dressing (such as what I used below)Light Vinagrette Dressing:1 1/2 tablespoons fresh lemon juice1 tablespoon Dijon mustard1/8 teaspoon pepper3 tablespoons extra-virgin olive oilMix the shredded cabbage, romaine and carrots in a bowl.  Top with chopped avocado.  Drizzle with light salad dressing just before serving.Tangy, crunchy and perfect for these dog days of summer.IMG_0172Are you a Pinterest fan?  Do you get sucked in looking at all the fabulous, inspiring foods, workouts, home decorations, gardens, clothes, travel spots, see the list is endless!
