Shrimp Avocado Salad . . .yes, please!
I don't know about you but this time of year all I seem to want to eat is a good, fresh, cool salad. Gone are my warm leftovers and soups for lunch! Now it is all about a yummy salad. I've been completely obsessed with avocados lately and am really trying to make sure I get a protein with each meal, so this salad is what I am about to prepare.I know this is a little backwards as I normally prepare the food and THEN share it with you. I've decided to take the horse before the cart this time. I've been sharing more with my Refresh & Reboot group this week and less here, so I thought I'd make an appearance. Ha. This looks and sounds so good to me that I'm just banking on it being pretty delicious. It's going to be dinner tonight so let's see how it turns out!
SHRIMP AND AVOCADO SALADINGREDIENTS8 ounces extra large shrimp, tails removed, cooked and chopped½ avocado, chopped1 cup chopped mango1 cup halved cherry/grape tomatoes1 cup mixed greens¼ cup diced red onionJuice of 1 lime1 ½ T Extra Virgin Olive Oilpepper to taste(original recipe from Running to the Kitchen)INSTRUCTIONSCombine the shrimp, avocado, mango, tomatoes, greens and onion in a large bowl.
