Vegetable Chicken Salad

I’ll keep this short and sweet today.  I haven’t shared a recipe in a LONG time.  Since it’s my favorite time of year – Finally summertime – And I created a little throw together salad that is SO good and perfect to keep in your fridge this summer  – I thought it was time to share something good.

I’ve been on a mission to add more vegetables to the day so I  get really ambitious and can easily buy more than we can eat.  The other night I took a pile of vegetables, put them on the counter and came up with a way to throw them together in a way that is a little different than my typical Big Ol’ Salad you often see on my Instagram feed.

I love a crunch in a salad and this is full of that.  And not a piece of kale or lettuce.  I hope you use this as a little inspiration for your own vegetables.  You will notice that there is no mayo here as in a typical chicken salad.  I decided to give it a little more flavor and lighten it up with a drizzle of Tessamae’s Green Goddess dressing.  It really gives it a good punch.  You’ll also notice I pretty much eyeball all of this so I hope you aren’t a stickler for precise measurements!

I’m quite excited about lunch this week . . .


Here’s the recipe . . . if you can even call it that!  You can basically look at the photos and figure it out!

Vegetable Chicken Salad

1 Cup Broccoli Slaw

1 Cup Cauliflower

2 mini Cucumbers, chopped

3 Baby Bell Peppers, chopped

4 mini Celery Stalks , diced

1/4 Purple Onion, diced

Tessamae’s Green Goddess Dressing

1/2 breast of Rotisserie Chicken, chopped

Mix all the vegetables together in a large bowl.  Top with chicken and fold in.

Drizzle dressing over and mix until moistened.

Enjoy!
