Dinner and a Workout

Someone told me this week that they missed my recipes and wondered what I had been creating lately.  Well, I have to confess that with the whole Stay Home, cook and eat at home, and having a smaller audience (of one) to cook for I am ridiculously tired of my own cooking.  I really do miss someone else’s cooking.

However, last weekend I was able to cook for all three boys so it was fun again.  And I made something worth sharing!  Today I’m giving you a tasty recipe for Healthy Jambalaya along with a fun Workout to go along with it.  Remember the Dinner and a Movie show?  This is kinda like that only different. . .

Healthy Jambalaya

1 lb turkey kielbasa or chicken sausage, sliced
1-2 T olive oil
4 cloves minced garlic
1 red bell pepper, chopped
1 green bell pepper, chopped
1/2 purple onion, chopped
1 celery stalk, diced
2 T cajun seasonings
1/8 tsp cayenne pepper
2 cans fire roasted tomatoes
1 cup low sodium chicken broth
4-5 cups cauliflower rice (I used 2 bags)
2 lb medium, peeled raw shrimp (1 is likely enough)
pepper and salt to taste, hot sauce if you like

Heat Olive Oil in the bottom of a heavy pot.  Add the sausage, garlic, peppers and celery and cook until soft and sausage is browned on all sides.  Add cajun seasoning, cayenne, pepper and salt (optional).   Add tomatoes and chicken broth to the pot and bring to a boil.  Reduce the heat and simmer around 30 minutes.  Add the   shrimp and cauliflower rice, stirring until shrimp are all pink and cauliflower rice is heated through.


Scoop into bows and top with hot sauce, sliced green onions or anything you happen to like. This was SO good and we had plenty for lunch the next day.
