Make this Fall Salad Today!

You know I love a Big Ol’ Salad!  The other day I posted a salad inspiration on my Insta Stories and later in the day made my version.  I’ve been eating out of that bowl of salad all week and it hasn’t gotten old yet.  It is the perfect combo on good greens, some fiber, crunchiness, sweetness, healthy fat, and when you add in your protein, the perfect meal.

No wondering what to have for lunch, dinner or as a side.  It’s right here just for you!

The Perfect Fall Salad

1 Bunch mixes greens
1 Cucumber Sliced
1 Zucchini Sliced
1/2 Cup sliced radishes
1 Can Chickpeas, drained
1/2 Cup artichoke hearts
1/2 Cup oil packed sun-dried tomatoes (I drain well)
1 Cup cherry tomatoes, halved
1 Cup quinoa
2 T dried cranberries
1/2 Cup feta cheese
Roasted Pepitas
1/4 Cup olive oil mixed with 2 T balsamic vinegar

On the side:
hummus, olives, cottage cheese, protein of choice

Grab a big bowl, begin layering the ingredients as listed.  Hold off on dressing until ready to serve to keep the salad fresh for as long as you need!

Ya’ll go make this and enjoy!  You’ll have a ready made bowl of goodness right in your refrigerator.  No scrounging around looking for something healthy to eat.  It’s all about being prepared and having the right foods easy and accessible to help you make the best choices.
