We are in our last month of summer and I’m really trying to soak in every minute. I hate to see this time of year winding down and our normal routines getting up and going. Here in the south, the temperatures will stay summer like for a bit longer, which makes this salad perfect to keep you cool and refreshed.
If you are looking for something quick, cool, easy and to prolong that summertime feeling, put this in your recipe file!
Watermelon Feta Salad
Ingredients:
6 cups of watermelon, cut into bite size pieces
8 oz cubed feta cheese
1/4 cup sliced purple onion
2 T chopped fresh parsley
2 T chopped green bell pepper
3 cups chopped cucumber
Fresh mint, optional
Place all ingredients in a large bowl.
For the Dressing:
1/2 Cup balsamic vinegar
Juice of 1/2 lemon
1 tsp fresh thyme
dash black pepper
3/4 Cup olive oil
Combine balsamic vinegar, lemon juice, thyme, and pepper into a small bowl. Slowly drizzle the olive oil in the the bowl, whisking until mixed well.
Gently toss the watermelon/feta mixture with 1/2 of the dressing mixture. Top with fresh mint.
Drizzle with leftover dressing at serving if you want more dressing.
