I haven’t posted a review in quite some time. However, when I was asked by Hampton Farms if I wanted to try their products I had to say, “Yes!”. I love peanut butter about as much as I love my dog, and if you know me, you know that’s a whole bunch. In fact, I don’t just love peanut butter, I love most any nut or anything including nuts.
If you follow me on instagram you may have seen all the goodness that came in the mail from Hampton Farms. It was a glorious collection of different peanut butters and so many nuts that my house can enjoy everything from Honey Roasted cashews to Siracha peanuts, just to name a few. Since I had all this great stuff I thought the least I could do was come up with something yummy to make. So, I got up early this morning and whipped up a batch of Peanut Butter Energy Balls. They took NO time at all, I promise. I had them made and waiting in the fridge when the Third Son came back from his morning football workout. He told me they were much better than the last ones I made. (sigh) I take that as a good sign.
So, here you go. . .
Peanut Butter Energy Balls
1 1/2 Cup Rolled Oats
1/2 Cup vanilla protein powder
1 T chia seeds
1/2 Cup creamy peanut butter
1 tsp vanilla extract
3 T honey
1/3 mini chocolate chips
2 T unsweetened almond milk or coconut milk (plus more if needed)
Add the oats, powder, cinnamon, peanut butter, honey, vanilla and chia seeds in a bowl, mixing well. Add in mini chocolate chips, combining until sticky.
Add in the almond milk, using hands to combine everything well. If needed, add a little more liquid. Then roll into balls and place on a cookie sheet. When finished rolling all balls place in a container in the refrigerator for at least 30 minutes.
Get your hands in there and get messy . . .
Roll them around into a nice bite size . . .
Place in a container in your fridge for at least 30 minutes. Then they are ready when you are!
I promise I made these start to finish in about the time it took Alexa to play two songs from the 1970’s Pandora list!
