Simplest Ever Black Bean Chili

Here is a great Post-Holiday meal, quick weeknight dinner and healthy crowd pleaser.  We had everyone around the table the other night and I barely had any leftovers.  If you want something simple, delicious and perfect for a cold night I have you covered!

*Also, if your wallet is hurting after the biggest spending holiday, I think the total cost of this meal was under $8.00 for all five of  us!*

SIMPLEST EVER BLACK BEAN CHILI


INGREDIENTS
1 Tbsp olive oil
1 jalapeno, diced
1 yellow onion
4-6 cloves garlic
1/2 lb. ground beef
3 15 oz. cans black beans
1 15 oz. can diced tomatoes with green chiles (like Rotel)
1 Tbsp chili powder
1/2 tsp cumin
1/2 tsp smoked paprika
1/2 tsp oregano

INSTRUCTIONS
Dice the onion and mince the garlic. Add the onion and garlic to a large pot with 1 Tbsp olive oil and cook over medium-low heat just until softened (2-3 minutes).
Add the ground beef, stirring and breaking apart, to the pot and continue to sauté until cooked through (5-7 minutes).
Add the three cans of beans (undrained), the diced tomatoes (undrained), chili powder, cumin, smoked paprika, and oregano. Mix it all together.
Let simmer about 10 minutes to let the flavors blend and help the liquid thicken slightly.

*My folks like it spicy, but if yours don’t you may want to cut the chili powder or jalapeno slightly*

That’s it!  Serve with whatever toppings you love!
