A No Pasta Dish on National Pasta Day

As usual, I’m a little late to the party,  but better late than never!  Earlier this week was one of those “National” days that I never seem to have on my calendar.  Those real bloggers out there are always ahead of the game in celebrating and sharing these sort of days.  Not quite sure how they do it . . .

Anyway, I have one of the BEST dishes to share with you today!  I am not kidding!  I have said before here that I do not really eat pasta.  I’ve never been a huge fan and it’s not because I’m afraid of eating carbs.  Lordy, I eat enough carbs to show that I have no fear of this food group.  Italian food is just not my favorite and I always feel less than good when I do eat it.    In fact, The Husband should know that after almost 25 years of marriage . . . but guess where he wanted to go on MY latest Big birthday?  A fancy Italian restaurant.  Can you guess who in the family really loves pasta??

I digress.  Tuesday, October 17 was National Pasta Day.  Since the other two men in the home happen to love pasta I decided to please them on this special day.  I ran across a beautiful dish on my instagram feed and had to track it down.  Look at this photo . . .

Lindsay Cotter has a wonderful feed full of gluten free foods.  She also blogs at Cotter Crunch.  This is her Creamy Tomato Gluten Free Penne Pasta (Dairy Free).  That’s a mouthful of a recipe name, right? Since I have been staying away from dairy lately I thought I might give this a try.  I re-worked it a tiny bit, used a different type of pasta, and have to admit my photo was not share-worthy, but the recipe definitely IS.  You know I do not share unless it passes the real test from my boys.  There were no leftovers . . .

MY CREAMY GLUTEN FREE PASTA

INGREDIENTS:

1 pkg Barillo gluten free spaghetti  (or whatever you like) OR I would also use Spaghetti Squash or Zoodles
1 can fire roasted diced tomatoes
1/2 cup diced onion
1/4 cup light mayo (Lindsay uses paleo mayo, but I did not have any)
1 egg
1 egg yolk
3-4 T olive oil
1 tsp minced garlic
black pepper
1/2 tsp red pepper flakes
Chicken Sausage

DIRECTIONS:

Saute garlic, onions, sausage and peppers in 1 T olive oil.  Once cooked, set aside.
Cook Pasta according to the directions.  Drain and add back to the pot.
Add remaining olive oil and mix thoroughly into the pasta.  Crack an egg into the pasta and mix well.
Add the diced tomatoes, spices and the onion/sausage mixture into the pasts.
In a small bowl mix the mayo with an egg yolk.  Add this to the pasta mixture stirring on low heat for the egg yolk to cook but not all the way through.
Serve while warm with any toppings you like – parmesan cheese, fresh basil, more red pepper flakes, or whatever sounds good to you!

Please try this dish!  It is quick, easy and Sooooo delicious.  Who knew how creamy that egg and little bit of mayo would make a dish?

It’s also a good comfort food dish that won’t leave you feeling over stuffed!
