Any recipe sharing has been almost non-existent the past couple of months. What can I say? It’s been summertime and most dinners and lunches I’ve made have been fresh and cool salads or quick meals that I throw together without even thinking of a recipe.
However, today I was a little bored of my normal chopped vegetable salad, so decided to put together a guilt free side. It’s a great way to add something light, easy and full of protein to your lunch or dinner.
GUILT FREE CHICKEN SALAD
One cooked chicken breast, chopped
1 cup chopped celery
4 Tb cranberries (optional)
1/2 cup chopped apple (I used a granny smith)
1 cup plain Greek yogurt
2-4 tsp Cumin
Black Pepper
Fresh Lemon Juice
Gather all ingredients together. Drizzle lemon juice over chopped apple. Mix all ingredients together and sprinkle liberally with black pepper. Cover and allow to sit at least 1 hour in the refrigerator. Enjoy!
