BLACK BEAN CHICKEN & SPINACH SOUP . . .

I know I really have no reason to complain.  I really don’t.  There are folks out there who actually have real reasons to complain.  I am not one of them.  That being said, I know I am going to sound like a whiner, and I guess I really am a whiner at heart because I am here to say I don’t like the cold.  I don’t like the thought of cold, being cold, or anything about the coldness that comes with cold.  And it’s winter here so cold comes with the territory.   And as I type this I also know that where I am is not really cold.  There are no icicles on my roof.  No bone chilling wind blowing.  No snow on the ground.  No chains on my car tires.  In fact, my car is parked in a nice, covered garage, not impacted on a snowy bank undriveable for days . . . So, just so you know that I know that I am a whiner about cold weather.

The only thing I DO like is the warm, comforting, filling soups I can come up with for supper.  Oftentimes I come up with recipes using just what we have on hand because I am too cold (or lazy) to get out and go grocery shopping. . . .

The other night was just such a night and what I call Black Bean Chicken & Spinach Soup was born.  And it was so tasty it will definitely be re-born!


BLACK BEAN  & CHICKEN SPINACH SOUP

INGREDIENTS:

1 medium onion, chopped
2-4 cloves garlic, chopped
2 T Olive Oil
1 1/2 tsp coriander
1 tsp cumin
1 can diced green chiles
1 can diced tomatoes with green chiles (like Rotel)
1 can black beans, rinsed and drained
2-3 handfuls of fresh spinach
1 quart low sodium chicken broth

3 chicken breasts, cooked and shredded

In a medium pot heat heat the olive oil over medium heat, add onions and garlic, diced green chiles, spices and season with salt and pepper. Cook, stirring until soft. Add the beans, tomatoes, chicken broth, 2 cups of water and spinach. Add in chicken. Bring to a boil then reduce heat to medium and cook until spinach wilts.

Serve with any toppings of your choice – or none – it’s so good all by itself!

    Marla Deen, this is Toni. You and Keith share a mutual friend on FB. That friend liked your playlist post today and I started scrolling through your FB page. You are still adorable! It blessed me to see how well you and your family are doing. I just ran up to the grocery and picked up a few ingredients for the black bean soup recipe you shared. Keith just made it and it is amazing!! So nourishing on this cold winter night. Thanks for sharing.

      That’s just too funny!! I am SO happy to hear from you!! Thank you so much for reaching out. I hope you all are doing great . . .in Athens, right? I would move there in a heartbeat. We come up to see our oldest who is a sophomore at UGA. Tell Keith he lives in the Chi Phi house right across from Lambda Chi so I always relive fun times when I’m there! I’m so glad you liked the soup . . . it’s one of Steve’s new favorites. Again, I’m so happy to hear from you!
