My Labor Day Hump and Menu for the Week

It’s the day after Labor Day – the official end of summer.  While most folks were celebrating at a lake, pool or cookout, I was laid out with probably the worst sinus infection I’ve had in three years.  I finally realized what a sinus infections was here and am still working on finding a cure.  I guess I’m whining a bit because I was just getting over a bug that had me down last week when I began getting new symptoms, aches, sore throat, chills and congestions.  I guess those darn mucus fellas could smell that my immune system was down and jumped  into my sinuses and every other crevice they could find and settled in for a long winter nap.

I began using all my old tricks to beat these guys but finally had to go to the doctor for the strong stuff.  I might be functioning today.  So, over the long Holdiay weekend while my family went about their business I was just so unproductive . . . except for making it through the entire Season 1 of The Tudors

Aren’t you jealous of my Labor Day Weekend?  At least I’m well rested. . . .

Since it is now Tuesday and school is back in session, sports are scheduled and life resumes, it’s time for me to get back in action.  I guess my family still needs to be fed.  Here’s what’s on the menu for the week:

No-Leftover Chicken Tortilla Soup

I am actually  making this right now, for me to have as I’m thinking it will help the get-well process.  Therefore, this post is actually taking longer to write than usual because I stop to shred chicken, chop veggies, rinse beans and get everything in the pot!

Sausage and Vegetable over Pasta

This is a great go-to meal for us.  When I don’t know what to cook for dinner I can always fall back on this one!  Here you go:

Turkey Sausage, cut into 1 inch pieces
Cajun Chicken Sausage, cut into 1 inch pieces
1 Red Bell Pepper, 1 Green Bell Pepper, 1 Purple Onion, diced
(or whatever vegetable you think sounds good to you!
Garlic, diced
Olive Oil, 2 T
1 can diced green chiles, optional
1 package all natural Angel Hair Brown Rice Pasta

Directions:

Add olive oil and garlic to a hot medium sized pan and cook until garlic is fragrant.  Add sausage and cook until edges are browned.  Remove sausage from the heat.  Add vegetables and green chiles to the pan and sautee until tender.  Prepare pasta per directions, and drain.  Add sausage back to pan with vegetables.  Add pasta to the sausage and vegetable mixture and mix well.  Remove to a big serving bowl and garnish with a little grated cheese if desired.

This is a really great and easy meal to add to your week!

That’s it for the week.  I’m sure I’ll be making another quick trip to the grocery a couple of times, but at least I have the basics covered.
