My mom had a few things she loved to take to parties or get togethers. She was not a gourmet cook, but did spend a lot of time in the kitchen. She had some signature dishes. Her Dixie Relish definitely needs to be marketed and her homemade pimiento cheese was one of the best out there! In the last couple of years she was a huge fan of having or taking a Greek Layered Dip to one of her social events or get togethers. I don’t think I have ever had her recipe, but while I was thinking of something to prepare this afternoon, I thought of her and decided to give it a try.
It’s full of fresh and healthy ingredients, most of which you likely have right on hand, is not complicated, because I rarely do complicated, and is light and perfect for this time of year. So, today, in honor of my mom, here is my Mediterranean Layered Dip.
6 oz crumbled Feta Cheese
2 oz 1/3 less fat Cream Cheese, soft
2 T nonfat Plain Greek Yogart
8 oz Garlic Hummus
1 1/2 Tsp Olive Oil
2 Tsp White Wine Vinegar
1/4 Tsp Garlic Powder
1/4 Tsp Dried Basil
1/4 Tsp Dried Oregano
1/4 Tsp Dry Mustard
1/4 Tsp Pepper
1/2 Cup Diced Green Onions
1/2 Cup Diced Cucumber
1/2 Cup Diced Tomatoes
1/2 Cup diced Black Olives
In a medium mixing bowl, combine the Feta, Cream Cheese and Greek Yogart until smooth. Spread this evenly over the bottom of a 9 inch pie plate or other serving dish. Top this layer with the hummus and spread evenly. Next, in another mixing bowl, combine the olive oil, vinegar, and all the spices. Then add the green onions, tomatoes, cucumber and olives. Mix thoroughly. Spread this mixture over the hummus layer.
Sprinkle a little more crumbled feta on the top if desired. Serve with baked Pita Chips.

Not too shabby for a quick, light and festive little appetizer to treat your guests.
