One thing we always have in our fruit bowl is bananas. They typically do not sit around here. My boys are pretty picky about them, too. The minute they begin to get a few spots they think they are done. I have to peel and serve them before they see how the outside looks! Oftentimes I remember to chop them up and freeze them for smoothies, but when I forget I get stuck with too ripe bananas that no one wants. I hate that!
Those too ripe bananas are perfect for banana bread, though. And I have a really delicious and decadent recipe I used to make all the time. I wouldn’t dare share that recipe here as it has more butter and sugar and eggs than is likely legal. It’s an old recipe of my grandmother’s who cooked for simple deliciousness and no care for content!
Having a few over ripe bananas this week, I decided to make a muffin version, much healthier, and decided to make them mini versions because I always think mini of anything is so darn cute. Plus, if you can’t eat just one, at least you are really only eating one serving size!
I shared these with my Yoga class on Friday and got the thumbs up to share. (Sometimes you get treats when you make it to one of my classes!)
Mini Banana Nut Muffins
(Make these with the nut of your choice, or nut free!)
3 over ripe bananas
1/2 Cup butter, melted
1/2 Cup Almond Flour
1/2 Cup Coconut Flour
1/3 Cup Coconut Palm Sugar
1/4 Cup Pecans, chopped
3/4 tsp baking soda
3/4 tsp cinnamon
1 tsp vanilla extract
3/4 tsp cinnamon
pinch of salt
Preheat oven to 350 degrees. Spray mini muffin tins with olive oil. Mash the bananas with a fork until smooth. Add butter, eggs, almond flour, coconut flour, coconut palm sugar, nuts, baking soda, cinnamon, vanilla and salt. Mix until smooth. Spoon into prepared muffin tins. If using mini tins, cook about 10 minutes or until toothpick inserted comes out clean. If using regular muffin sized time, cook about 20 minutes.
