A Surprisingly Good Dinner . . . Cannellini, Chorizo and Kale Soup

I recently saw a recipe in a Real Simple magazine that looked pretty easy, warm, healthy and with sausage in it, I thought it might be okay to serve my crew.  I filed it away to try some time.  Today was just the time.  Today was a day jam packed, but also one of those rainy, dreary days that calls for soup.

I have to tell you I was SOOO pleasantly surprised by this meal!  While I was preparing it I wasn’t particularly excited about it.  I even thought about making a salad for myself and leaving the soup to the boys.  My Goodness, I was wrong.  This dish is so flavorful and tasty I will definitely serve it again!  So, you get the benefit of a good meal!

Of course, I tweaked the original recipe just a bit.  This is my version:

CANNELLINI, CHORIZO AND KALE SOUP


2 cans cannellini beans, drained

Olive Oil

3/4 ob fresh Chorizo Sausage, casings removed and chopped into pieces

1 package Chicken Cajun Sausage, sliced

1 onion, chopped

Pepper to taste

2 Celery stalks, chopped

2 Carrots, chopped

6 Cups Low Sodium Chicken Broth

1 bunch of kale, stems discarded and torn (6-7 cups)

4 slices Proscuitto

Swirl olive oil in a dutch oven to cover the bottom.  Add the sausage to cook, breaking it up and cooking until brown.  Add the onions and cook stirring until the onions get soft.  Add celery, carrots, and pepper and cook 5 minutes.  Add the broth and beans and cook on medium for 15 minutes.  Add the kale and cook, stirring, until it is wilted.  Keep it warm until ready to serve.

That’s it.  It’s so easy.  And I’m not going to lie here.  The taste is so good.  Really warm and spicy and full of flavor.  So, what I thought would be a ho hum dinner was really a big fat winner.  If you don’t believe me, try it.  See if you have any leftovers because I did not!
