FLAVORFUL CROCKPOT FLANK STEAK

I love a crockpot meal.  I love a flank steak.  Why in the world had I never thought to put these two wonderful things together?  Beats me, but now that I finally have you can see the magic.  This is a super easy recipe that is also super clean.  I’m talking only veggies, flank steak, which we all know is a wonderfully lean cut of meat, a little apple cider vinegar and you are basically DONE.  The end result is a flavorful, so tender it will just fall apart, steak with tender vegetables all in one pot.  And a pot that you haven’t paid a bit of mind to since the time you hit the “on” button.  Again, magical!  Here’s what you do:

Flavor Crock Pot Flank Steak

What you need:

2 lbs or more flank steak, cut into about 4 pieces


1 red bell pepper and one yellow bell pepper, cut into strips

1 cup matchstick carrots

1 onion, chopped

3 stalks celery, chopped

2-4 cloves of garlic, minced

1 14 oz can diced tomatoes

1 14 oz can diced tomatoes with onions and garlic

1 T apple cider vinegar

1 tsp dried oregano

1 tsp ground cumin

salt and pepper to taste

What you do:

All the beautiful vegetables!

Place the flank steak in the bottom of a crock pot and cover with the rest of the ingredients.  Cover and cook low for about 8 hours.  Keep on warm until ready to eat.

Ready to turn on and ignore!

With two forks, shred the pieces of flank steak into loose chunks.  I did this while the meat was still in the crockpot, but you can remove it if easier and just add the meat back for serving.

This was a GREAT meal to have on a busy weeknight – after a long work day, full day of after school activities or sporting events, or just a day you don’t want to be in the kitchen too long!  As you can see I served with a side of sautéed spinach, and we all know how quickly you can whip up the spinach!  As always, use whatever vegetables you have on hand!  I hope I’ve given you an idea to help make your weeknight easier – AND healthier!
