My FAVORITE Black Bean Soup

What’s for dinner?  It’s cold.  It’s rainy.  It’s dreary.  Comfort food sounds in order.  The New Year has brought on the healthy eating so meal planning is based on lots of real foods, vegetables and lean proteins.  So, again, what’s for dinner? My best ever Favorite Black Bean Soup is the perfect answer.  I promise it is SOOOOOO good – you will have to try this!  Plus, it is super easy AND inexpensive AND healthy.

I knew I wanted Black Bean Soup, but just went with my gut on throwing this together.  Here goes:

MY FAVORITE BLACK BEAN SOUP (honestly!)


Ingredients:

Olive Oil

1 Onion, chopped

2 T chopped garlic

2 celery stalks, chopped

2 cans black beans, drained

1 can Rotel tomatoes, or diced tomatoes with garlic and onion

1/2 or more Organic Low Sodium Vegetable or Chicken Broth

2 tsp or more Chili Powder

3 slices cooked bacon, chopped

Directions:

In a medium, heated pot drizzle olive oil.  Add onion, garlic and celery.  Cook until soft.  Add black beans, Rotel tomatoes, chili powder,  and broth.  Stir to mix and cook on medium heat for a few minutes for flavors to immerse.

Scoop out about 3/4 of the soup and put in a food processor or a Vitamixer.  Pulse to puree and then add back to the soup pot.  Add cooked bacon.  Keep warm until ready to serves.

That’s it.  You are done.  It’s warm, a bit spicy, creamy with just enough beans and tomatoes to bite into, and perfect.

Like I said, it’s My Favorite Black Bean Soup and SOOO good.  PLEASE try this.  I’m so excited for lunch to come today because I have some left over.  Win, win.

(and I think this would be Dr. Oz approved!)
