A Yummy Salad perfect for the Season

One of our fun Christmas traditions is getting together with a special group of friends each year.  We aren’t exactly sure how it started, but it’s one of the nights we always look forward to.  Sometimes we meet out and sometimes in each others’ homes.  This year we met in one couple’s home and each brought something yummy to share.  I immediately offered to bring the salad.  I know it sounds like the easy way out, but I love a good salad and like having an occasion to try out a new, fun creation.  Something the rest of my family might not appreciate.

I found a beautiful, festive salad on Pinterest, so I can’t take credit for it, but it’s perfect for a Christmas table!  As you can see it was easy to gather and pack up to go, also.  When it was time for dinner I just tossed everything together and nothing could have been easier!

PEAR POMEGRANATE SALAD

 

Ingredients

Salad
2/3 cup chopped walnuts or pecans, toasted
3/4 cup pomegranate arils
3 oz feta cheese, crumbled
1/2 cup dried cranberries
2 Bartlett pears (firm but ripe), cored and sliced
9 oz baby spinach
Dressing
1/4 cup apple cider vinegar
3 Tbsp extra-virgin olive oil
1 1/2 Tbsp honey
1 tsp dijon mustard
Salt and pepper, to taste

Directions

Whisk all dressing ingredients in a bowl to blend well. Place all salad ingredients in a large salad bowl, drizzle with desired amount of dressing then toss to evenly coat. Serve immediately.

Isn’t it sooooo pretty?  It was so yummy.  Now I have to say The Husband, for some strange reason, does not like fruit in his salad.  I say he doesn’t know what he’s missing!  So for him I can just serve him before I add the pears. . . .
