New Foods this week – good and bad. . .

The fresh peaches right now are simply out of this world!  So ripe and sweet!  While they are delicious right out of the fruit bowl, of course, I have to turn them into a wonderful smoothie.  They are just the best thing of the week!  Chic Fil A Milkshakes are a  pale comparison to these!

Fresh Peach Smoothie
Handful of ice
1 scoop vanilla protein powder
1-2 fresh peaches, pealed and sliced
1 cup almond milk
Blend and Enjoy!!

Next was a sort of made up dish using what I had on hand in the kitchen.  I call it Quinoa Risotto.
I used the above ingredients, quinoa, olive oil, 2 wedges Laughing Cow cheese and 1/4 Cup shredded Parmesan cheese.

Quinoa Risotto

Cook Quinoa according to package directions.  After cooked, add the cheeses to melt.  Stir until creamy and enjoy!


This was a huge hit!!  Who knew my boys would eat quinoa in such heapfuls!

The other morning I woke up with no breakfast plan.  That is not a good thing!  I am not a fan of cereal and because the Third Son doesn’t do milk it’s never a good option.  He also doesn’t do yogart or smoothies, so unless I’m a short order cook at 6:30 am I have to have a plan.  I had some Jimmy Dean crumbled Turkey Sausage I hadn’t tried before.  Alas, no eggs to scramble them in.  I did have tortillas and cheese.  So, I thought a breakfast quesadilla would do the trick.  Who wouldn’t want that?
Well, as good as they looked and sounded, they weren’t the hugest hit I had hoped.  One son didn’t want the cheese, one said he wasn’t hungry and one thought the idea of tacos for breakfast was pretty cool. 

I think this would be a really good breakfast – I choose to ignore my boys on this one.

Well, that’s it for now.  It’s Saturday, so I’m off of kitchen duty.
