A week of salads . . .

I’ve been following the VB6 plan this week which means I’ve been focusing on eating a mostly plant based diet and having any meat protein or processed food at our nightly meal.  Basically, for me, this means I’ve been eating lots of salads at lunch and often at dinner, too.  This is just fine with me as I love a good salad and love throwing all sorts of things in a green salad.  It means I’ve been staying away from my beloved crackers and any cookies that may be around.  I especially love a good salad in the warm weather.  It’s cool, light and quick.  What could be better?  So, here are some of my variations from this week:

Spinach, Kale, sunflower seeks, dried cranberries and fresh sliced peach. So Good! I sprayed a few pumps of Salads Spritzers Balsamic Breeze on the top. It’s the new favorite!

Mixed greens with chopped tomato, green bell pepper, green pepper, sunflower seeds and sliced artichoke hearts.

This was today – so good! Mixed greens with dried cranberries, fresh orange, sunflower seeds and a tablespoon of hummus and a little feta cheese. So good!

The BEST arugula salad to accompany a home made pizze (recipe coming!) Arugula with sliced avocado and fresh parmesan cheese dressed with a little olive oil and lemon juice. Delicious!

I’m not sure what’s in store for tomorrow’s lunch but I’m sure it will be good and fresh and made from whatever I have on hand.  It’s been a great week of salad eats!
