Friday Finds . . .superfoods and inspiration

This week on our 8 Week Challenge I challenged the participants to include some Superfoods into their weekly eats.  I sent out a list including foods found here.  This article also explains exactly what Superfoods are and what makes each food “Super”.  In keeping with the challenge here are some of my eats this week:

Spinach, quinoa, avocado and blueberries

Two eggs with sauteed spinach in whole wheat tortilla

Roasted peppers, spinach, black beans, fish taco with salsa and avocado

Lots of berries!

Vanilla protein shake made with banana and almond milk and added berries. Perfect for a sweet tooth!

Doing some of my cleaning out this week, I ran across the Husband’s step-father’s laptop.  A couple of years ago, we had to move him into a nursing home and clean and move his things.  We still have tons of his things!  Anyway, I happened to see a card taped on the back of his laptop.  I turned the card over and found the following quote. And, boy, did he follow it!

Life should not be a journey to the grave with the intention of arriving safely in a pretty and well preserved body, but rather to skid in broadside, throroughly used up, totallly worn out and loudly proclaiming — WOW-WHAT A RIDE   

Next, here is my Inspiration for this week!  I ran across an article on a friends face book page that made my day.  Check out this photo of Janis Dengler of Spartanburg, South Carolina.

She is an aerobics and dance teacher at the Shepherd’s Center at First Presbyterian Church who, this week, celebrated 80th birthday!  Her class surprised her by wearing t-shirts saying, “80? Dang” — Dengler’s age and a play on her name. She just smiled and went right back to leading the class.  You can read the entire article here. 

How great is she?  I would love to follow in her footsteps and continue what I am doing for years to come, and even into my 80’s!

    Reading this blog post of yours makes me wonder why people make such a big fuss about eating healthy. I mean look at all these super foods you find. They look so yummy!
