Consistency . . . and a few Friday Finds

This week has really gotten away with me.  I normally wrap up on Friday a few things I have read or seen during the week.  I am going to begin today by writing about what I wanted to get to yesterday, but never found the opportunity.  

As I was leaving my house yesterday at 7:30 a.m. I noticed a retired couple walking briskly down my street, bundled up, carrying a little flashlight.  (Since the time change it is still dark at this time)  This wasn’t a new or different sight.  Every morning this couple walks down my street, passing my house, before turning around to go back up the street for their morning walk.  They walk every single  morning.  It can be warm and sunny, freezing and dark, or even raining.  Yes, I have witnessed them walking under umbrellas some mornings.  Once in a while one of the couple will be alone walking.  I always worry then that the other is sick or has a doctor’s appointment.  These two are so committed that I know it has to be important for one to let the other go out alone.  This couple is such an inspiration to me.  They are definitely committed and are the perfect example of consistency.  

I thought some this week about consistency.  I think consistency is the most powerful and most important component of any program.  It can be a workout program, eating program, learning program, golf game,  or anything you decide to pursue.  Some days I have a bad workout.  Some days I might sit more than I would like.  Some days I eat something not so healthy.  Some days are definitely better than others.  I think the key is to realize that life happens, but being consistent in your work and effort is what adds up to success.  Doing something is always better than nothing at all.  Think about your goals.  If you can realize that you might not get there overnight, but are consistent in your work toward that goal, you will have the key to your success.  (I’m thinking my blog might be a little more successful if I were more consistent?)

The food front was pretty slow this week.  Nothing really creative. I have had a couple of folks tell  me they prepared the stuffed chicken breasts from earlier this week and loved them.  Yeah!  That makes my day!

Egg whites, spinach, one slice provolone cheese and avocado. So good!

Last night’s sauteed spinach with red bell pepper and portabello mushrooms. Add a dash of red pepper flakes and garlic. Try it!

What I need to be doing right now! Ha!

What I’m scarfing down right now! I let myself get far too hungry and threw everything onto a bed of spinach and arugala. Ham, avocado, dried cranberries, a little hummus and leftover spring rolls and a tad of leftover seaweed salad.

And, have you seen these?  I just discovered them.  They are awesome!  140 calories for 25 chips, no sugars, no gluten.  Obviously, not perfect, but a great little treat snack . . .
