Friday Finds . . .

How did it get to be Friday?  Where has the week gone?  I’ve had things I’ve wanted to post this week, but haven’t sat down long enough to fit it in!  The week has been filled with boys’ baseball games, a day at a great health event, teaching classes, traveling to see my sweet Mom and sister-in-law, a birthday to not celebrate, and a college road trip to plan.  I’m happy to be sitting at my desk playing a little catch up and spread a little Friday Finds  . . .

Did you just say, Awwww? It’s true though!  But, you CAN eat these yummy protein pancakes.  I promised the recipe earlier, so here it is.  I hope it’s a hit with you, too!

PROTEIN PANCAKES

Ingredients:

1/2 C Quaker Oats (dry weight)
1/2 cup hot water (to cook oats)
1 scoop low carb protein powder (isolate)  (I used Pure Protein Whey Vanilla Powder)
1/4 C egg whites
1/4 tsp. ground cinnamon (to taste)
optional: almond extract
optional toppings: Almond butter, blueberries.

Directions
Mix oats with hot water. Sitr and let stand for a couple minutes till fluffy. Mix protein powder with the eggs and then mix this with the oats. Stir in the cinnamon and almond extract and fry on a hot gridle sprayed with PAM cooking spray. 
Makes 4 pancakes.
(optional: Top with a thin layer of organic PB or almond butter, or eat with blue and raspberries!)

Total Carbs 7.8 g, Dietary Fiber: 1.2 g, Protein: 8.4 g

Some folks are going on Spring Break next week.  Me?  I’ll be on a road trip with the First Son and dragging the middle Son along to take a peek at a few colleges.  Should be interesting!  The thought of all the hotel stays brought to mind the whole “When do I exercise?” dilemma.  If you are wondering what to do in your hotel room, check out the 12 Minute Athlete for some ideas.   http://www.12minuteathlete.com/hotel-room-workouts/.


This was my favorite warm lunch this week.  I really wanted a warm, gooey grilled cheese sandwich but had this warm, gooey hummus flat thing instead.  Really good!  Hummus and lettuce between two LaTortilla Factory Mini Three Seed Soft Wraps.  50 calories each, 5 g fiber, 0 trans fats and 2 gr protein each.  Very tasty.  Didn’t even miss the cheese!

Favorite Quote of the week came from my mother.

Life offers no guarantees, only opportunities

And, thank heavens for my mother.  She gave me this wonderful treat for my birthday –  A delicious perfect lemon square covered with oh so sweet powdered sugar.  It was definitely a sweet treat but so yummy and worth it!

Get what I’m saying here?

Have you heard the recent study that found that Mothers of Boys had a shorter life expectancy than Mothers of Daughters?  What?  Really?  Why is that?  Is it all the stress they cause by their messy rooms, the constant flow of foul odors and sounds that seem to surround them, or the constant motion that they bring which can be so exhausting?  Now there’s another strike against me I’m going to have to fight!

Any thoughts on this Mothers of Boys will die young theory?  Any tips on how I should handle this  new bit of info?  Do you exercise in your hotel room?  Jump on the bed?  Take your own pillow?
