This is actually my favorite time of day. I love to be up before the rest of the house. (except for my worthless dogs who woke up when I came downstairs and are now back on the couch snoring). It’s quiet, peaceful, and I love watching the light slowly creep up and into the windows. I love that first cup of coffee, just sitting and being still. This is my time to read a devotional, pray, think. All by myself.
On school mornings I always hate this time to end when I have to begin the rounds of waking everyone up and starting the hustle of the day. I know there will be no more “quiet” for the rest of the day .
Sometimes this routine gets disrupted and I don’t have this quiet time. I have found that the rest of my day is a little “off”. If it’s because I stayed in bed too long and it’s my own fault, I get so mad at myself. I always feel as if I can’t get that time back.
I have always been a morning person. Even in college I could NEVER sleep in, even when I stayed up and out far too late to admit. I remember one time being so happy that I actually slept until 10 am. I can only remember doing that once! Sometimes it can be a curse!
I used to use this time to get out the door and go for a run or head to the gym. It’s always such a good feeling to get in an early morning workout and have the whole day knowing you have accomplished something. The “experts” say that those who exercise first thing in the mornings are most likely to keep the habit and exercise regularly. These days, if I need to get a workout in early in the morning, I find I still need to get up even earlier to have a little quiet time before putting on my running shoes. Then I feel balanced for the day.
On another note, I made a really pretty spread for a party last night. Of course, I was the one bringing the healthy dish! The colors were so bright and fresh, I just loved it and wanted to share how pretty vegetables can be!
I blanched the vegetables separately in boiling water for 1-2 minutes until they got a little soft, dipped them in an ice bath to stop the cooking and then drained them. That’s it!
I made a dipping sauce of 1 cup greek yogart, 1 cup light mayo, 1/4 cup whipping cream, 1 tsp oregano, 1 tsp basil, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp black pepper, 2 tsp chili powder, 2 tsp honey.
