WHITE CHICKEN AND SAUSAGE CHILI (CROCKPOT STYLE)
1.5 lbs boneless skinless chicken breast
1 lb turkey sausage, casings removed and chopped into chunks
2 cups chicken broth (sodium free)
1 small can white corn, drained
2 cans Great Northern beans, drained
1 small can chopped green chiles
1 14 oz can diced tomatoes, drained (I like fire roasted or garlic and onion)
Garlic Powder to taste
1 packet White Bean Chili Seasoning Mix ( I just discovered this handy little packet by McCormick and it’s so easy!)
Pepper to Taste
Put all ingredients in the crock pot and cook on low heat for about 8 hours. Before serving, take the chicken breasts out of the crock pot and place on a chopping board. Use a fork and knife and shred the chicken. Put shredded chicken back into the crock pot.
That’s it! Scoop into a bowl and top with your favorite toppings! Just not too heavy handed on the cheese!

You can also do this on the stovetop by browning the chicken and sausage before adding it to all of the ingredients in the pot. Simmer at medium heat for 20 minutes.

Great chili… Our friend (Hugh) substituted Carrol Shelby’s Chili Mix with McCormicks.. Not sure if there is much of a difference but its very good…
