Dinnertime Rescue . . .

I’ve decided to let Cooking Light rescue me from the constant meal planning ordeal for this month.  I picked up the latest copy at the grocery on Sunday and am challenging myself to choose and prepare as many recipes as I can from the October issue.  So, let us be your guinea pigs . . . we will choose, prepare and taste the recipes for you!  I’ll let you know what my crowd thought about the recipe and, voila’, you, too, can have something new for dinner!

Since we live in Atlanta and it was Monday night, it was a big football night in the home full of all males and testosterone.  I thought ITALIAN SAUSAGE HOAGIES would be the perfect thing for the Monday Night Fooball Falcons game.  I was right.  This one was a BIG HIT and will be served again.  

(I’m taking the recipe straight from the magazine.  I had to tweak it to feed a hungry crowd)

Italian Sausage Hoagies


4 (2 oz) hoagie rolls, halved, lengthwise
9 oz sweet turkey Italian sausage, cut into 1 inch thick pieces (I  used Italian hot sausage)
1/2 Cup prechopped onion
1 Cup low sodium marinara sauce
1 small red bell pepper, thinly sliced 
1/4 teaspoon freshly ground black pepper
2.25 oz shredded part skim mozzarella cheese (about 1/2 Cup)

1.  Preheat broiler to high
2.  Hollow out top halves of rolls.  Arrange rolls, cut sides up, on a baking sheet.  Broil 1 1/2 minutes or until toasted.  Set aside.
3.  Heat a large skillet over medium-high heat.  Add sausage to pan; cook 2 minutes or until lightly browned, stirring occasionally.  Add onion and garlic; cook 1 minute.  Add marinara, bell pepper, and black pepper; bring to a boil.  Reduce heat and simmer 6 minutes or until bell pepper is crisp-tender. 
4.  Arrange about 3/4 Cup sausage mixture over bottom half of each roll; sprinkle each serving with about 2 Tablespoons cheese.  Place on a baking sheet; broil 2 minutes or until cheese melts.  Top with top halves of rolls.  

Calories: 309; Fat 7 g; Protein 20.7 g; Carb 28.5 g; Fiber 2.5 g; Chol 51 mg; Iron 1.8 mg; Sodium 588 mg; Calc 182 mg

This was really a good, easy dinner.  My boys were thrilled which always makes me happy.  I served the hoagies with carrots and sauteed kale and spinach.  I am doing a “no bread” thing so I had some of the sausage marinara and will say it was good.    There you have it – something for dinner!  You’re welcome.
